Making a adventurous meal when you are on a limited diet can be difficult so I am going to give you the recipe for one of my favorite meals that has been updated for my special diet loved one...Buttered Chicken!
This recipe is Gluten Free, Soy Free, Dairy Free, Casein Free and Sugar Free.
You will need:
1/2 cup (1 stick) of plant based butter
1 medium onion (chopped)
2 garlic cloves (chopped
1 Tbsp. of ground ginger
1 medium tomato chopped (or 1/2 pint of grape tomatoes)
1 1/2 Tsp Garam Masala
1 1/2 Tsp Ground Cumin
1 1/2 Tsp Ground Turmeric
1/2 Tsp Salt
1/4 Tsp Ground Cinnamon
1/4 Tsp Cayenne Pepper (optional)
1/3 cup Chicken broth
2 Tbsp. Tomato paste
Dash of Curry powder (optional)
3/4 cup Country Crock plant based heavy cream (or 1 can of coconut cream)
1/2 cup dairy free milk of choice
7-8 Chicken tenders (or 2-3 chicken breast) diced
Step 1 - Melt plant based butter over medium heat
Step 2 - Cook onions until they are clear
Step 3 - Add garlic, tomatoes and spices, simmer for 10 minutes
Step 4 - Add broth, bring mixture to a boil
Step 5 - Lower heat and simmer uncovered for 15-20 minutes
Step 6 - Remove from heat and allow mixture to cool slightly
Step 7 - Place mixture into a blender (or food processor or simply use a hand held mixer with beaters) blend until mixture is smooth
Step 8 - Place mixture back in the pot
Step 9 - Add diary free cream, dairy free milk, tomato paste and diced chicken
Step 10 - Allow mixture to heat and simmer for 5 minutes
Step 11 - Serve over rice
