Rich & Creamy

You cannot go wrong with a classic éclair cake, the recipe is simple, you can make it ahead of time, and the flavor is rich. Here is an updated version of the recipe that will make it Gluten-free, Limited Dairy, Soy-free and limited sugar, I hope you enjoy it!


What you will need is:

Kinnikinnick Vanilla Wafers

Simply Delish Vanilla pudding

Non-dairy milk substitute

LILYS Semi-Sweet Baking chips (or non-dairy chocolate of your choice)

Pure Vanilla Extract


Step one: Mix the pudding with your non-dairy milk substitute and let it sit for 5 minutes

Step two: Line a small, round Tupperware container with the Kinnikinnick Vanilla Wafers

Step three: Blend the vanilla pudding with a dash of pure vanilla extract

Step four: Pour a layer of pudding on the wafers, spreading evenly

Step five: Repeat steps 2-4 to make a second layer

Step six: In a microwave safe bowl melt 1/2 cup of semi-sweet baking chips with a 1/4 tsp of water or non-dairy milk substitute until melted and smooth

Step seven: Pour over the top of the wafers/pudding, spreading evenly without stirring it into the mixture/layers

Step eight: Chill for at least 2 hours

Little Tips: Typically with this dessert you would use graham crackers however my experience with Gluten-free graham crackers is not good. They tend to be too soft and it is not structurally able to handle the pudding mix without dissolving.

You can also add 1/2 tub of non-dairy whipped topping if you want the pudding mixture to be lighter in texture/flavor and it makes a larger portion, it is totally up to you!!
