It's that time of year where you want to enjoy holiday treats like the "hot coco bombs". It has been hard to find premade versions of this festive beverage that is Gluten Free, Soy Free, Dairy Free and Sugar Free/Limited Sugar so one of my family members took it to task to create it. Without further ado here is the recipe!
For the chocolate shell you will need:
Enjoy Life semi sweet and dark morsels
Circular mold
Step 1: Mix the morsels and melt them down in either a microwave safe bowl or in a small pot.
Step 2: Coat the circular molds, covering the interior completely
Step 3: Allow them to cool and solidify
Step 4: Place a second coat of chocolate in the mold
Step 5: Allow to cool and solidify
Step 6: Carefully remove the chocolate rounds from the mold and place in the refrigerator until they are needed
For the hot chocolate you will need:
Premade hot chocolate mix of choice (I like Lilybean Dark Chocolate)
Or you can make your own with the following 1/2 cup of coconut sugar (or sugar substitute of choice)
1/4 cup of Dutch processed cocoa
Marshmallows of choice (I prefer Smashmallow, vanilla)
Now for the assembly
Step 1: Scoop enough of the cocoa mix into the chocolate round until it is 3/4 full
Step 2: Using a pastry bag, pour some of your chocolate blend (used for making the mold) place a ring of chocolate around the edges of the chocolate round.
Step 3: Stick another round on top to complete the bomb
Step 4: Place back in the refrigerator to solidify
Decorate any way you like!
