Fun Fare

It's that time of year where you want to enjoy special treats like Whoopie Pies. It has been hard to find premade versions of this dessert that is Gluten Free, Soy Free, Dairy Free and Sugar Free/Limited Sugar so one of my family members took it to task to create it. Without further ado here is the recipe!


For the cake you will need:

  • King Arthur Gluten Free Chocolate cake mix

  • 2/3 cup of Vegetable Oil

  • 1 1/3 cups Water

  • 4 Eggs


For the frosting you will need:

  • Lilybean Vanilla marshmallow Frosting

  • 10 Tablespoons butter alternative/plant butter

  • 3 Tablespoons milk of choice/milk alternative

Lets begin:

  • Pre-heat oven to 325 degrees

  • Prepare a cookie sheet with Parchment

  • Prepare the cake and frosting according to the directions

  • Measure 1/4 a cup of the cake mix into rounds on the parchment

  • Bake for 15 minutes

  • Let cool

  • Peel off of the parchment, add frosting and top with another cake round

Enjoy


NOTE: The Whoopies Pies can be refrigerated for up to 3 days and then it is best to wrap and freeze them so that they do not go bad.
