A Heartier Meal

Making a tasty meal when you are on a limited diet can be difficult so I am going to give you the recipe for one of my go-to meals for my special diet loved one...Brunswick Stew!

The recipe has been broken down into a reasonable individual portion but it can be doubled or tripled if you are making enough to share or freeze. As always, remember to check labels/content to make sure it meets the needs of your loved one. This recipe is Gluten Free, Soy Free, Dairy Free, Casein Free and Sugar Free.


You will need:

  • 1 can (16oz) Tomato Puree

  • 1 can (14.5oz) Petite Diced Tomatoes

  • 1 can (8.75oz) Whole Kernel Corn

  • 1 can (8.75oz) Cut Green Beans

  • 1 can (8.75oz) Garden (Sweet) Peas

  • 1 can (8.75oz) Lima (Butter) Beans

  • 1-2 Cooked chicken Tenders or 1 Chicken Breast

  • 6oz BBQ

  • Honey (to taste)

Step 1 - Open the cans and place contents into a pot over medium heat

Step 2 - Chop BBQ and shred chicken into manageable pieces, place into the pot

Step 3 - Add honey to sweeten the stew to taste

Step 4 - Let the stew simmer at medium heat for at least 30 minutes

Step 5 - Cool and enjoy


Note: if your loved one likes potatoes feel free to add them to the stew.
